On the table this week

This week we've tried a few new recipes that you might want to try:

Pappardelle Pasta with Olives, Thyme and Lemon
This one was only okay.  I couldn't find any pappardelle so I made Barilla's flat lasagna noodles then cut them into thick strips.  Next time, I wouldn't bother with that and would just use a different flat noodle like fettuccine.  I added some chicken (because any meal without meat isn't a meal to Marty), and would next time double the sauce part of the recipe.  It needed more flavor.

Slow Cooker Beef Pot Roast with Gremolata
This one I made just about as called for - instead of cooking the roast on high for two hours then on low for 4, I cooked it on low for eight.  Then I removed the roast and shredded it.  I sorted out the vegetables and placed them in a container.  I added the remaining juice to the shredded beef and put it in the fridge.  We reheated it over the next few days and it had become a lot juicier.  It was delicious.

Chicken Cacciatore (or Kitchen Chackatory as it's called at our house)
I thought this one was really good and the vegetables were delicious.  I didn't have luck browning the chicken as described in the instructions - I ended up turning up the heat to medium-high and cooking the chicken for 6-7 minutes a side.  I doubled the recipe because we were cooking for a crowd (6 adults, 2 kids).  I purchased the "family chicken pack" (3.5 lbs. of various pieces) so that I didn't have to cut anything up, and we ended up with a lot of extra chicken.  There weren't too many vegetables left over, so next time I may add some extras.  Also, I added two packages of button mushrooms, quartered.  I didn't have a dutch oven large enough to accommodate all this food, so I placed it all in a roasting pan and cooked it at 400 degrees for 45 minutes.  When it was all done cooking, I removed the chicken and vegetables and placed them in separate serving dishes.  I scooped out the remaining juice and served it like a gravy (mashed potatoes as a side).  It was all so, so good.

Please let me know if you have any trouble opening these recipes - I'd be happy to add them in a different way.

    Ditto Jane's comment. I will never forget standing in Jennie's kitchen years ago while she decided to "whip up" a batch of cranberry pistachio biscotti. I didn't even know you could make biscotti. Duly impressed.
