Return of the menu

I love cooking - selecting recipes, planning our meals for a week at a time, making a single trip to the grocery store to pick up everything we'll need.  But, for the past few months, I haven't been doing such a great job in planning things out.  Most of our meals have followed the same pattern: some kind of meat, green beans (because for three trips in a row, I've purchased a giant bag of green beans at Sam's Club, thinking we were out), and fruit.  On the nights when we weren't having that, I filled in with takeout from the wide assortment of fast food places in our town.  Nothing glamorous and questionably healthy.

This weekend we've been able to spend some time at home, and I finally had a bit of time to assess our freezer, cupboard and refrigerator inventory.  We have a few treasures and a lot of herbs from the garden.  Today we're off to the grocery store to pick up a few items, and if we're lucky, tonight we're having something delicious and planned.

On the table tonight: Broiled tilapia with herb-spiked mayo, Cold-fashioned potato salad, Italian bread, green beans (still required)

Editorial note: I'm having trouble using the upgraded version of this blog program.  So, until I figure it out, here are the links to the recipes...
