Beef: It's what's for dinner. For the rest of my life.
Last week the kids and I were playing in the driveway after work and a pickup truck pulled into the driveway. I recognized the driver, waved as he backed up to our garage door. "Where should I put it?" he asked. "Put what?" I answered. "Your beef," he said. "Didn't Marty call you?"
Uh no. Nope, he didn't. So, several trips to the basement later, my freezer is now fully loaded to the top with beef. Seeing my freezer filled with practically nothing but beef was like a flashback to the time that Marty bought a side of beef "for the savings". That was the time in our life also known as "The Year of the Meatball." I was spared slightly that year when, due to electrical problems, our freezer went out and we had to toss countless packages of ground beef. But now we're back to the beginning and I'm faced with finding endless ways to prepare ground beef. I have no problem preparing the occasional roast, or grilling a steak once in awhile, but the thought of coming up with ways to eat 80 lbs. of ground beef is daunting. Especially since I don't care for anything that uses "cream of" soups (not that we can eat them anyway).
On the table last week: Hamburgers and chili
On the table last Monday: Italian meatloaf, spaghetti squash with marinara, garlic mashed potatoes
Five pounds down, 75 to go.

Caillou isn't the only one who whines... Next time try going for a WHOLE buffalo - that's right, round about 600 lbs of meat. There is never less than 300 lbs of red meat in my freezerS (yes, that's plural). Granted, some days I just pretend it isn't there, but still. Just make sure you have a standing order with the neighbors that in event of power outage, BBQ at your house! Otherwise, here are some ideas.
Tacos. Chips and meat. Spaghetti. Meatballs. Stroganoff. Tacos. Burgers. Lasagna. Tacos.
